I love blogging and it has become a great outlet for me. When I started my blog, I knew it would be hard to be placed in a box. Trust me, I tried. I quickly realized that I march to my own beat–which led to my transition. My bio tells quite a bit about me and from time to time I’ll post about those things (i.e., hair, books, vintage/random finds, thrifting, etc.). But then I saw something that reaffirmed everything…
My blogger friend Blitz and Glam posted a textgram on her blog post, “Blog What You Live”, that said “Blog what you live, don’t live to blog.” This thought has been whirling in my mind as new ideas bring new inspiration. Each year my style, voice, or ideas may change. Not necessarily in that order–but it happens. Two things about me that are evident: I run and I love to try new recipes. I am very much inspired by health, fitness, and Oh YES! — good food, but I look forward to blogging more of what I live. I think that’s what makes this journey worthwhile. I’m really excited about what is to come!

I hope everyone had a Happy Thanksgiving! You’ve probably noticed I haven’t posted in a minute…I’ve been sick and shut in. I’m feeling much better now…thank God! I was quarantined last night*side eye* lol but I guess it helped!
I enjoyed the holiday with my family and ate pretty good, but I almost feel like I need to redo Thanksgiving dinner, because I couldn’t indulge like my normal self. Everyone else did eat good!
I made a few sweet potato pies! This is the before pic. Sorry there’s no after they got demolished! lol I also made a Butter Pecan cake…Mmmm mmmm!
Oh and my Dressing was OTDC! Yes it was that good! Of course this wasn’t all…we had the works! And my Mom’s Macaroni and cheese was heavenly!
Went by Earth Fare to look for E-Boost, but they only had Emergen-C! Gave em’ a try, didn’t really see a difference probably, because my cold got too for along.
I cheered for the Alabama Crimson Tide (from the couch)! It was still good times all around.
I’m super excited about the Christmas holiday season I can’t wait to see what Santa brings! ;-)
I had eggplant for the very first time a few weekends ago and couldn’t believe how much I enjoyed it. It was like love at first taste! That day, I said I was going to find a really tasty recipe and make it for myself. I knew it was meant to be when Weight Watchers dropped an Eggplant Parmigianarecipe in my inbox. One thing about Weight Watchers is they always have tasty recipes. They show you how to still enjoy the things you love and eat healthier.
I decided to make it for me & my Hubby this past weekend! And let me just say…by the time I made it back home from a night out with my girlfriends, it was a huge chunk missing in the dish! So yes…he loved it!!!
All the ingredients! (minus the garlic powder I left it out the pic)
I decided that 1/2 inch thick was a little thicker for my liking so I thinned them out a bit. But if you love eggplant…go for it!
I used over 1 and a 1/2 eggplant (using more bread crumbs) and I added more cheese since it was going to be for more than just me. I also wanted to eat off of it a few days.
Did I mention that the eggplant was even more delicious the next day!? After the seasoning from the bread crumbs sat up and got all intertwined…OMG! I added a side of whole wheat linguine with tomato/marinara sauce and we had ourselves a tasty meal! My Mom wanted to try it so I took her a little baggy with some eggplant parmie patties so she could try it! She loved it too!
